As I grow older, I seem to be gravitating towards more of a vegetarian loving diet. I am a huge animal lover, and I honestly, rarely crave an type of meat or chicken. I have never eaten lamb, and the only thing that I still love, is fish. So, because my back was aching this afternoon, I abandoned the idea of preparing supper for my boys. I ordered them a healthy dinner, and I opted to make a very quick, easy, and delicious vegetarian supper, for myself. I love the spiral cut zucchini. I also love baked potato.
My own creation. Spiral cut zucchini, sautéed with sun dried tomato, olive oil, fresh garlic, picnic salt blend, zataar, and grand bazar blend, from Spice and Tulips, and a touch of pasta sauce. I baked a potato, and mixed everything together. It was a delicious thing!
