My boys have loved breaded chicken, since they were very small. It is still a favorite. I try to keep it as healthy as possible! I purchase organic chicken breasts, and remove all fat. I put them in a large plastic bag, with breadcrumbs and flour, dredge it in egg with a splash of water mixed in, then back into the bag. Coat well. Heat olive oil with a bit of butter (or not), and add the chicken. This is when I season both sides. Seasoning is very personal, but we like a lot of flavor! I use salt, ground pepper, garlic powder, and grand bazaar everyday blend, from Spice and Tulips. I season one side, and when its time to turn it over, I season the other side. Place on paper towels, to absorb oil. Serve with fresh lemon wedges. I prepare fresh veggies and usually a type of potato.
